When the food system goes through a transition to a more sustainable, regional organization, the relationship between the citizen who buys and eats food, the producer who grows food, and the chain between them is likely to change.


I asked the architecture students in ArtEZ to explore how the city of tomorrow relates to sustainable, regional food. The students chose a location they found relevant to research, developed a program for that place (buy-taste-learn-inform-eat) and gave an innovative shape to a ‘hub’ or ‘interface’ where consumer and food meet.
